The wine is made from 2 sites in Stellenbosch, farmed by amongst others Danie Carinus and Pierre Winshaw. With both vineyards down 45% on their average yields, this vintage will satisfy both the Loire cab franc lover as well as the Bordeaux drinker. We did whole bunch fermentation on 20% of the grapes with the remaining 80% destemmed and left on the skins for 4 weeks to allow additional integration of tannins with one punch down performed daily. The wine was aged in 2nd and 3rd fill French oak barrels for 11 months. Pencil shavings with graphite, red and black fruit with black tea finish on the nose. The palate is focussed and tight, again that chalky tannins. A wine that deserves the best lamb tjops you can get.
